Course Syllabus

 

 

Food Safety for Registered Environmental Health Specialists is a 24 hour  (2.4 continuing education unit) course providing education in accordance with requirements established in section 65807. The 3 day (24 hour) course is conducted on site at your facility or at the designated location on the Monterey Peninsula of California. The four-hundred page course book has been carefully structured to provide a continuing educational foundation for Registered Environmental Health Specialists. The course syllabus is consistent with all principles outlined by the California Department of Public Health for Registered Environmental Health Specialists Continuing Education.

 

 

             

COURSE TITLE: Food Safety for Registered Environmental Health Specialists

COURSE DESCRIPTION: The course is designed to provide continuing education to Registered Environmental  Health Specialists. Topics and subject matter will encompass:
 
  1. Food protection and quality control
  2. Foodborne illness, epidemiology and food security
  3. Water, noise and air quality
  4. Food safety microbiology
  5. Waste Management systems
  6. Effective cleaning and sanitizing
  7. Crisis Management
  8. Personal hygiene and workplace safety
  9. Environmental health management
  10. The Hazard Analysis Critical Control Point System
  11. Integrated pest management
  12. Potentially hazardous foods
  13. Housing and bathing code regulations
  14. Genetic Engineering and electromagnetic radiation

COURSE COMPLETION: Awarding of continuing education units and a certificate after successfully attaining a minimum proficiency level verified by a 75% or higher passing score on the final exam.

COURSE OBJECTIVES: Upon completion of the course, the Registered Environmental Health Specialist will be able to:
 
  1.        Understand and communicate the importance of maintaining food safety standards in foodservice establishments

  2.        Understand the causes and dangers of foodborne illness

  3.        Understand the CDC risk factors for foodborne illness

  4.        Apply food safety regulations and compliance procedures in association with the Environmental Health Inspection Process.

  5.        Understand design and construction standards that apply to commercial foodservice establishments.

  6.        Understand the microbiology of food in association with pathogens responsible for foodborne illness.

  7.        Understand the flow of food stages and their association with the critical factors involving cross contamination, time-temperature controls, receiving, storage, preparation, holding and service.

  8.        Demonstrate knowledge of the importance of an integrated pest management program.

  9.        Understand the importance of good personal hygiene as a critical factor in safe food handling.
